The Cascade Culinary Institute ® at Central Oregon Community College, accredited by the American Culinary Federation, prepares students to become competent in a variety of skill areas: hot and cold food preparation, baking, and dining room service. To obtain the certificate, students must successfully complete the required courses by demonstrating skills in the subject areas as well as passing written exams.
Students working while completing the program are eligible to become certified working chefs by the American Culinary Federation. Those completing the program may find positions as prep cooks, line cooks, and in some cases Sous Chefs.
Cascade Culinary Institute ® strengths are many; we believe that hands on, one on one training are more beneficial, that is why we allow a maximum of 22 students per term to our three highly trained and experienced Chefs allowing us to have a 8 to 1 instructor ratio. The learning lab includes instruction and production of the weekly culinary lunch restaurant.

COCC's culinary program plans for expansion

The Central Oregon Community College culinary program, known for training students in everything from the art of baking to five-course meals, hopes to expand, school officials said.
COCC, Cascade Culinary Institute staff and local restaurant professionals met over winter to develop a plan of how the program could grow up to 100 students in an 18,000 sq. foot building in the next seven years.
Expanding the culinary institute to 100 students would make the program one of the largest professional-technical offerings at COCC. School officials want to offer an associate in applied science degree in culinary management and another in baking management. A certificate in culinary baking and a Bachelor of Arts degree in culinary arts specialties, in partnership with a university, would also be offered. Currently the institute offers a certificate program.

In the coming year the school will focus on developing curriculum and marketing strategies for an expanded program. Local restaurant professionals say an expanded COCC culinary program would benefit their industry. "I'd like to see more trained individuals to choose from for my kitchen staff." says Mike Cooper, Deschutes Brewery, "An expanded culinary program could raise the bar in restaurants."
